  • 4 oz (115 g) cream cheese, softened
  • 2 tbsp sugar
  • 2 cups (300 g) unbleached all-purpose flour
  • 2 tbsp cocoa powder, sifted
  • ½ tsp baking soda
  • 1/8 tsp salt
  • 1 cup (225 g) unsalted butter, softened
  • 1 cup (210 g) brown sugar
  • ¼ cup (55 g) sugar
  • 1 tsp (5 ml) vanilla
  • 1 tsp (5 ml) red gel-based food colouring
  • 2 eggs
  • 8 oz (225 g) white chocolate, coarsely chopped

  1. Line a plate with parchment paper.
  2. In a bowl, combine the cream cheese with the sugar until the sugar has dissolved. Shape into 20 balls using about 1 ½ tsp of the mixture for each one. Place spaced out on the plate and slightly flatten each ball. Freeze for 30 minutes or until completely frozen.
