Four-Layer Chocolate Yule Log
We gave the rolled and rounded yule log a modern makeover. Airy and extra-soft, the meringue-based cake is prepared on a single sheet-pan and simply cut into four pieces for clean lines that make it easier to box up. Those intense, dark, chocolatey layers are best eaten slightly chilled, and the ganache base firms up when cold, so it’s solid and sturdy for a trip. And to take it over the top, how about some pistachio crumble?

Ricardo was (just a little) proud when he brought out this masterpiece. A yule log but reimagined—and no rolling involved! Thanks to gorgeously caramelized pears, a kiss of local sweet clover (or imported vanilla) and sinful pastry cream softened with whipped cream, this beaut will put your holiday menu over the top. Especially decorated with star-shaped (or any shape, really!) gingerbread cookies; we made our own, but you can use store-bought to save time.

Maple, Raspberry and White Chocolate Yule Log
Go beyond the bûche to give an authentic look to this fabulous dessert. When hardened, the layer of white chocolate shatters and mimics the texture of bark, while the cake is extra moist thanks to the drizzle of oil added to the batter. We’re confident you’ll be asked to make it again next year.
