Ингредиенты

  • 1 cup (200 g) hard wheat berries (see note)
  • 2 cups (60 g) kale leaves, stems removed, leaves chopped
  • 1 large shallot, thinly sliced
  • ¼ cup (60 ml) 0% plain Greek yogurt (see note)
  • 2 tbsp (30 ml) vegetable oil, plus more for the salad
  • 2 tbsp (30 ml) apple cider vinegar
  • 2 tsp (10 ml) whole-grain mustard
  • 1 tsp (5 ml) honey
  • 1 garlic clove, finely chopped
  • 1 cup (175 g) green grapes, halved
  • ⅓ cup (35 g) roasted walnuts, chopped
  • ⅓ cup (40 g) feta cheese, crumbled

  1. In a large pot of salted boiling water, cook the wheat berries for 1 hour or until al dente. Two minutes before the end of cooking, add the kale and shallot. Drain. Rinse under cold water and drain well. Set aside in a large bowl.
