  • 1 1/4 cup (310 ml) graham cracker crumbs
  • 2 tablespoons (30 ml) sugar
  • 1/4 cup (60 ml) unsalted butter, melted
  • 2 teaspoons (10 ml) gelatin
  • 3 tablespoons (45 ml) water
  • 1/2 cup (125 ml) sugar
  • 2 teaspoons (10 ml) cornstarch
  • 2 cups (500 ml) strawberry purée(see note)
  • Juice of 1 lemon
  • 3 egg yolks
  • 3 egg whites, at room temperature
  • 1 pinch cream of tartar
  • 1/2 cup (125 ml) sugar

  1. With the rack in the middle position, preheat the oven to 180 °C (350 °F).
  2. In a bowl, combine the crumbs, sugar, and butter. Press into a 23-cm (9-inch) pie plate
