Sticky Toffee Pudding

- 1/2 cup (125 ml) 35% cream
- 1/4 cup (55 g) dark brown sugar
- 1/4 cup (55 g) semi salted or unsalted butter
- 3/4 cup (180 ml) boiling water
- 1 cup (170 g) pitted dates, chopped
- 1 tsp baking soda
- 1 tsp (5 ml) vanilla extract
- 6 tbsp (85 g) unsalted butter, softened
- 2/3 cup (140 g) dark brown sugar
- 2 tbsp (30 ml) molasses
- 2 eggs
- 1 1/3 cups (160 g) self-rising baking flour
- 1/2 cup (125 ml) milk

- In a saucepan, bring the cream, brown sugar and butter to a boil, stirring until smooth. Pour half the caramel into a 20-cm (8-inch) square baking dish or a 2 litres (8 cups) capacity pan. Set aside.
