Raspberry Mignonette

- 1/4 cup (60 ml) red wine vinegar
- 1/4 tsp pink peppercorns, crushed
- 5 raspberries, torn into small pieces
- 1 shallot, finely chopped

- In a bowl, combine all of the ingredients. Season with salt. Cover and refrigerate until ready to serve with the oysters. The mignonette will keep for 2 days in an airtight container in the refrigerator.
