  • 1/4 cup (10 g) flat-leave parsley leaves
  • 1/4 cup (10 g) cilantro leaves
  • 1/4 cup (10 g) chives, cut into chunks
  • 1/2 bird’s eye chili, seeded and chopped
  • 6 tbsp (90 ml) white wine vinegar

  1. In a small food processor, purée all of the ingredients. Season with salt and pepper. Cover and refrigerate until ready to serve with the oysters.
