2 cups (500 ml) milk
¼ cup (60 ml) lemon juice
2 tsp dried tarragon
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
2.2 lb (1 kg) boneless, skinless chicken thighs (about 12 thighs)
3 cups (450 g) unbleached all-purpose flour
1 tbsp dried tarragon
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp red pepper flakes
1 tbsp ground black pepper
1 tsp salt
Vegetable oil, for frying
2 tbsp butter
2 garlic cloves, chopped
2 tbsp unbleached all-purpose flour
1 ½ cups (375 ml) milk
11 oz (300 g) firm washed rind cheese, rind removed, cheese grated (see note)
1 jalapeño chili pepper, seeded or not, chopped
½ tsp ground black pepper
