In a large pot over medium heat, soften the leek and garlic in the butter. Season with salt and pepper. Sprinkle with the flour and continue to cook for 1 minute while stirring.

Add the broth, chicken and potatoes to the pot. Bring to a boil. Simmer for 15 minutes or until the potatoes are tender. Add the spinach continue to cook until wilted.

Meanwhile, in a bowl, combine the cornstarch and cream until smooth.

Add the cream mixture and cheese to the pot. Bring to a boil and simmer for 1 minute while stirring. Adjust the seasoning.

Divide the soup among four bowls. Sprinkle with more cheese and chopped dill. Serve immediately.
