  • 1/4 cup (60 ml) coarse salt
  • 1/2 teaspoon (2.5 ml) fresh rosemary, chopped
  • 1 tablespoon (15 ml) fresh parsley, chopped
  • 1 teaspoon (5 ml) fresh thyme, chopped
  • 1 tablespoon (15 ml) fresh oregano, chopped
  • 1/2 cup (125 ml) balsamic vinegar
  • 1 slice 3 lbs (1.5 kg) beef top sirloin, about 2-inch (5-cm) thick
  • 2 tablespoons (30 ml) olive oil
