White Bean and Sausage Stew

- 1 onion, chopped
- 2 garlic cloves, chopped
- 4 Toulouse sausages, cut into 1-inch (2.5 cm) pieces
- 1 tbsp (15 ml) olive oil, plus more for serving
- 1 tbsp (15 ml) tomato paste
- 2 cans (19 oz/540 ml each) white beans, rinsed and drained
- 1 can (14 oz /398 ml) diced tomatoes
- 1 cup (250 ml) chicken broth, hot
- ½ tsp ground cumin
- Toasted bread, for serving (optional)

- In a large pot over medium-high heat, cook the onion, garlic and sausages in the oil for 5 minutes. Add the tomato paste and cook for another 30 seconds while stirring. Add the remaining ingredients except for the bread. Season with salt and pepper.
- Bring to a boil. Simmer for 15 minutes or until the sausages are cooked through, stirring occasionally. Drizzle with olive oil and serve with slices of toasted bread, if desired.
