    In a large skillet over medium heat, soften the leek in the butter. Add the spinach and continue to cook for 2 minutes while stirring. Season with salt and pepper. Transfer to a slow cooker.

    Add the remaining ingredients to the slow cooker. Mix well. Cover and cook on Low for 1 hour. The dip can be maintained on Warm for up to 1 hour.

    When ready to serve, mix well. Adjust the seasoning. Serve with vegetable crudités or soda crackers.
