Ингредиенты

  • ¼ cup (60 ml) warm water
  • 1 ½ tsp instant yeast
  • 3 ¼ cups (490 g) unbleached all-purpose flour
  • ¼ cup (55 g) sugar
  • 1 tsp salt
  • 1 can (14 oz/398 ml) light coconut milk
  • 1 tsp (5 ml) vanilla
  • ½ cup (115 g) virgin coconut oil (see note)
  • 3 tbsp (45 ml) virgin coconut oil, melted, plus more for brushing (see note)
  • 1 ¼ cups (265 g) brown sugar
  • ½ cup (125 ml) maple syrup
  • 1 tsp ground cinnamon

Инструкция

  1. In a small bowl, combine the water and yeast. Let sit for 5 minutes until the yeast has completely dissolved.
  2. In a stand mixer fitted with the paddle attachment, combine 3 cups (450 g) of the flour with the sugar and salt. Add the yeast mixture, coconut milk and vanilla. Mix until smooth. Add the coconut oil and mix for 5 minutes or until smooth. Stir in the remaining 1/4 cup (40 g) of flour until the dough comes together. Cover tightly. Refrigerate for 8 hours or overnight (see note).
