½ English cucumber, thinly sliced on a mandoline
1 small red onion, thinly sliced
2 tbsp (30 ml) rice vinegar
2 tsp (10 ml) maple syrup
1 lb (450 g) lean ground beef

1 tsp ground coriander
½ tsp red pepper flakes
½ tsp ground black pepper
½ tsp ground Sichuan peppercorns (optional)
4 packages (200 g each) fresh udon noodles
1/3 cup (75 ml) tamari
3 tbsp (45 ml) maple syrup
1 tbsp roasted sesame seeds
