Ingredients

1/4 cup (60 ml) chili sauce
2 tablespoons (30 ml) soy sauce
2 tablespoons (30 ml) mirin
1/2 teaspoon (2.5 ml) sambal oelek
1/2 teaspoon (2.5 ml) cornstarch
1 block 1 lb (454 g) firm tofu, cut into 1-cm (4-cm) thick and 1/2-inch (4-cm) long sticks, patted dry
1/3 cup (75 ml) cornstarch
1/2 cup (125 ml) peanut or olive oil
4 green onions, chopped
1 teaspoon (5 ml) chopped fresh ginger
2 cloves garlic, finely chopped
1 cup (250 ml) unsalted cashews, toasted
1/4 cup (60 ml) chopped fresh cilantro (optional)
