With our RICARDO cookie mixes, making ice cream sandwiches is super easy. In this recipe, ice cream is sandwiched between two s’mores-flavoured cookies with chocolate and marshmallow. To bring back those fireside memories, dip the sandwich edges in melted chocolate and sprinkle with graham cracker crumbs.

- 12 chocolate & marshmallow cookies, baked and cooled (see note)
- 2 cups (500 ml) vanilla ice cream, softened
- 6 oz (170 g) dark chocolate, chopped
- 1 tbsp (15 ml) vegetable oil
- 2 tbsp graham crackers, crushed

- Line a baking sheet with a silicone mat or parchment paper.
- Place a 1/3-cup (75 ml) scoop of ice cream over the bottom of half of the cookies. Close the sandwiches with the remaining cookies, pressing down until the ice cream covers the entire surface of the cookies. Place on the prepared baking sheet. Freeze for 30 minutes or until the ice cream is firm.
