In a skillet, brown the onion and bacon in the oil. Add the garlic and cook for 1 minute. Pour into the slow cooker. Add the remaining ingredients and blend well. Season with salt and pepper. Cover and cook on high for about 6 hours or until the beans are tender. Remove the sprigs of herb and adjust the seasoning.
