    Place beans in a large bowl. Cover with water and soak for 12 hours or overnight at room temperature. Add water, as needed, so that beans are always covered. Rinse and drain.

    In a slow cooker, combine all ingredients. Cover and cook for 8 to 9 hours on Low, or for 6 hours on High. Mix well. Adjust the seasoning.
