    In a food processor, chop the cilantro, green onion and garlic. Add the shrimp, egg, soy sauce and sambal. Blend until coarsely puréed. Season with salt and pepper. Using a spatula, scrape down the sides of the food processor as needed.

    Place the sesame seeds in a shallow bowl.

    On a work surface (see note), spread the shrimp purée over the bread, using about 1/4 cup (60 ml) per slice. Working with one slice of bread at a time, press shrimp-side down into the sesame seeds. On the work surface, cut each slice of bread into 4 triangles.

    In a large non-stick skillet over medium heat, warm the oil for 5 minutes. Brown half of the bread triangles at a time in the oil, sesame-side down, for 3 to 4 minutes. Flip over and continue to cook until the bread is golden, about 1 minute. Drain on a plate lined with paper towels. Serve with store-bought sweet chili sauce, if desired.
