On a work surface, cut one-third of the shrimp (4 oz/115 g) into small dice. Transfer to a bowl. Refrigerate.

In a food processor, purée the remaining shrimp with the celery. Add the mayonnaise and purée until very smooth. Transfer to the bowl of diced shrimp. Add the chives, tarragon and cayenne. Season with salt and mix well. Transfer to a serving bowl.

Serve the shrimp mousse with crackers and toasted baguette, if desired. Although best enjoyed the same day it is made, the shrimp mousse will keep until the following day in an airtight container in the refrigerator.
