Sheep’s Cheese and Arugula Grilled Cheese

- Whole-grain mustard, to taste
- 8 large slices country loaf bread
- 1/2 lb (225 g) Ossau-Iraty or other firm sheep’s milk cheese
- 1 cup (250 ml) baby arugula
- 1/4 cup (60 ml) butter

- Spread mustard on each slice of bread. Layer the cheese and arugula on 4 slices of bread. Close the sandwiches.
- In a skillet, melt half the butter. Brown 2 sandwiches at a time for 3 to 4 minutes per side or until the cheese has melted.
