  • ¼ cup (35 g) unbleached all-purpose flour 

  • ¼ cup (128 g) tapioca starch 

  • ¼ cup (60 ml) water 

  • ½ lb (225 g) skinless, boneless chicken breasts, cut into ¾ x 2-inch (2 x 5 cm)
