Sausage Bites with Fennel, Orange and Spicy Honey

- 1 tbsp (15 ml) honey
- ¼ tsp red pepper flakes
- 1 dried Parmesan sausage, cut into 12 diagonal slices, each about 1/8 inch (3 mm) thick
- 12 small basil leaves, torn
- ¼ fennel bulb, thinly sliced
- 12 fresh Parmesan cheese shavings
- 1 orange, peeled and cut into skinless segments, and the segments halved
- Fennel fronds (optional)

- In a small bowl, combine the honey and red pepper flakes.
- Place the sausage slices on a serving dish. Top each slice with the basil, fennel, cheese, orange pieces and fennel fronds, if desired. Drizzle with the spicy honey. Serve immediately.
