    Preheat the oil in the fryer to 375 °F (190 °C). Line a baking sheet with paper towels.

    Peel the vegetables and cut into a fine julienne with a mandolin.

    Dip half the vegetables in the hot oil and cook until golden brown, about 3 to 4 minutes. Drain on paper towels. Season with salt. Fry the remaining vegetables.
