Ingredients

1 boneless turkey breast (2.5 kg/5.5 lb) with skin on, tenderloins removed (2 half breasts)
6 cups (1.5 litres) cold water
2 tablespoons (30 ml) salt
2 tablespoons (30 ml) brown sugar
1/2 teaspoon (2.5 ml) ground cinnamon
2 cups (500 ml) cold pineapple juice
1/2 cup (125 ml) dried cranberries
3/4 cup (180 ml) boiling water
1 onion, chopped
1 clove garlic, finely chopped
2 tablespoons (30 ml) butter
1/4 cup (60 ml) chicken broth
1/2 lb (225 g) Toulouse sausage meat (about 2 sausages) or other mild pork sausage
1/2 cup (125 ml) diced, toasted fresh bread
1/4 cup (60 ml) crushed pistachios
1/2 teaspoon (2.5 ml) ground cinnamon
