  • 1 whole turkey, about 11 lb (5 kg)
  • 4 tsp salt
  • ½ lemon
  • Vegetable oil, for brushing
  • 2 cups (500 ml) water
  • 1 ¼ lb (565 g) ground pork
  • 2 tbsp (30 ml) vegetable oil
  • 2 onions, chopped
  • 2 garlic cloves, chopped
  • 4 cups (200 g) sliced bread, diced (about 4 slices)
  • 1 cup (250 ml) chicken broth
  • ¼ cup (50 g) dried apricots, diced
  • ¼ cup (40 g) dried cranberries, coarsely chopped
  • ¼ cup (35 g) raisins
  • 1 tsp ground allspice
  • 1 tsp salt
  • 4 oz (115 g) bacon, chopped
  • 1 tbsp (15 ml) vegetable oil
  • 3 tbsp (45 ml) gin
  • 3 tbsp unbleached all-purpose flour
  • 3 cups (750 ml) chicken broth

  1. Remove any innards from the cavity of the turkey and set aside for another use. Pat the cavity dry with paper towels.
  2. Arrange the turkey, breast-side up, in a large glass or ceramic dish. Cover the skin with half of the salt. Rub the salted skin as well as the cavity of the turkey with the cut-side of the lemon for 2 minutes. Sprinkle with the remaining salt, making sure the breasts are well seasoned. Cover with plastic wrap and refrigerate for 2 days.
