What’s the holidays without a stuffed turkey at the centre of the table?

- 1 whole turkey, about 11 lb (5 kg)
- 4 tsp salt
- ½ lemon
- Vegetable oil, for brushing
- 2 cups (500 ml) water
- 1 ¼ lb (565 g) ground pork
- 2 tbsp (30 ml) vegetable oil
- 2 onions, chopped
- 2 garlic cloves, chopped
- 4 cups (200 g) sliced bread, diced (about 4 slices)
- 1 cup (250 ml) chicken broth
- ¼ cup (50 g) dried apricots, diced
- ¼ cup (40 g) dried cranberries, coarsely chopped
- ¼ cup (35 g) raisins
- 1 tsp ground allspice
- 1 tsp salt
- 4 oz (115 g) bacon, chopped
- 1 tbsp (15 ml) vegetable oil
- 3 tbsp (45 ml) gin
- 3 tbsp unbleached all-purpose flour
- 3 cups (750 ml) chicken broth

- Remove any innards from the cavity of the turkey and set aside for another use. Pat the cavity dry with paper towels.
- Arrange the turkey, breast-side up, in a large glass or ceramic dish. Cover the skin with half of the salt. Rub the salted skin as well as the cavity of the turkey with the cut-side of the lemon for 2 minutes. Sprinkle with the remaining salt, making sure the breasts are well seasoned. Cover with plastic wrap and refrigerate for 2 days.
