    With the rack in the middle position, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a bowl, combine the spelt flakes, spelt flour and brown sugar. Add the butter and mix with your fingertips just until the dry ingredients are moistened. Spread out on the baking sheet. Bake for 8 minutes. Stir gently. Bake for another 2 minutes or until the crumble is slightly golden. Set aside.
