Who says a meal can’t be both comforting and refined? This dish, perfect for entertaining, in which local products take centre stage, is the exception that proves the rule.

- 1/4 cup (40 g) whole spelt flour
- 2 tbsp brown sugar
- 3 tbsp butter, softened
- 4 onions, peeled and halved
- 1/4 cup (55 g) butter
- 1 tbsp whole spelt flour
- 3/4 cup (180 ml) cider
- 2 cups (500 ml) chicken broth
- 1 tbsp brown sugar
- 1/2 tsp dried rosemary
- 1/2 tsp coriander seeds, crushed
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 rack pork loin, 4 bones, about 2.2 lb (1 kg)
- 1 tbsp butter
- 1 garlic clove, chopped
- 6 cups (180 g) mixed red and green lettuce, thinly sliced

- With the rack in the middle position, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, combine the spelt flakes, spelt flour and brown sugar. Add the butter and mix with your fingertips just until the dry ingredients are moistened. Spread out on the baking sheet. Bake for 8 minutes. Stir gently. Bake for another 2 minutes or until the crumble is slightly golden. Set aside.
