Radicchio Tonic Mocktail

   In a small pot, bring the water and sugar to a boil. Remove from the heat. Add the radicchio, rosemary and lemon juice. Let sit for 20 minutes. Strain the syrup and let cool. Compost the radicchio and rosemary. Refrigerate the syrup.
