Quinoa and Cheddar Cheese Stuffed Squash

- 2 small acorn squash
- 2 tbsp (30 ml) olive oil
- 2 tsp (10 ml) honey
- 1/2 cup (125 ml) quinoa, rinsed and drained
- 1 onion, chopped
- 2 cloves garlic, chopped
- 2 tbsp (30 ml) olive oil
- 1 tsp (5 ml) harissa paste
- 1 roasted red bell pepper, peeled, seeded and diced
- 1/2 cup (125 ml) roasted peanuts, chopped
- 1/4 cup (60 ml) raisins
- 3/4 cup (180 ml) grated cheddar cheese
- 2 tbsp (30 ml) cilantro, chopped (optional)

- With the rack in the middle position, preheat the oven to 400 °F (200 °C). Line a baking sheet with parchment paper.
- Cut the squash in half. With a spoon, remove the seeds. Brush the flesh with the oil. Season with salt and pepper. Place the squash on the baking sheet, cut side down.
- Bake for 40 to 45 minutes or until the squash is tender. Right out of the oven, brush the inside of the squash with the honey.
