  • 7 oz (200 g) puff pastry dough
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped

  • 1 lb (454 g) mushrooms, finely chopped
  • 2 tablespoons (30 ml) white wine vinegar
  • 2 tablespoons (30 ml) water
  • 4 beef tenderloin steaks
  • 1 tablespoon (15 ml) olive oil
  • 1 tablespoon (15 ml) butter
  • 3 oz (85 g) liver pâté
  • Salt and pepper

  1. With the rack in the middle position, preheat the oven to 190°C (375°F).
  2. Line a baking sheet with aluminum foil.
  3. Roll out the dough into 4 10-cm (4-inch) squares. Place the squares on the baking sheet. Bake until golden, about 15 minutes. Cool to room temperature, then cut the squares in half horizontally. Set aside.
