Bring joy to everyone this summer by grilling this classic: skewers! Made using an affordable pork loin roast, cut it into cubes and then marinate in a mix of fish, soy and hoisin sauces. Serve with coconut rice for a taste of vacation on your plate.

- 1 ½ lb (675 g) boneless pork loin roast, fat trimmed, cubed
- 2 tbsp cilantro stems, chopped
- 1 tbsp brown sugar
- 1 tbsp (15 ml) fish sauce
- 1 tbsp (15 ml) low-sodium soy sauce
- 1 tbsp (15 ml) hoisin sauce
- 2 garlic cloves, finely grated
- Cilantro leaves, for serving
- Lime wedges, for serving
- 2 cups (460 g) jasmine rice
- 1 can (14 oz/398 ml) coconut milk
- 1 ¼ cups (310 ml) water
- ½ tsp salt
