    In a spice grinder or using a mortar and pestle, grind the spices with the salt.

    Coat the medallions in the spice mixture.

    In a large non-stick skillet over high heat, cook the medallions in the oil for 3 minutes per side for pink or until the desired doneness. Transfer the medallions to a plate and set aside. Clean out the skillet.
