On a plate, drizzle the pork chop with some of the lemon juice on both sides. Sprinkle with the oregano. Season with salt and pepper. Let marinate for 5 minutes. Using a pastry brush, lightly oil the meat.

In a large skillet over medium-high heat, brown the pork chop in the oil for 4 minutes (see note). Flip the pork chop over. Add the zucchini and onion. Continue to cook for 4 minutes, stirring the vegetables a few times. Add more oil as needed. Place the meat on a plate and let rest for 5 minutes.

Add the tomatoes to the skillet of vegetables. Continue to cook the vegetables until the zucchini is tender and the tomatoes release their juice, about 4 minutes. Season with salt and pepper.

Serve the pork chop and vegetables on a plate. Serve with tzatziki and a lemon wedge.
