    Cut the vanilla bean in half lengthwise. With the tip of a knife, remove the seeds. Set aside.

    In a saucepan, bring the water to a boil with the sugar, lemon juice, and vanilla pod and seeds. Add the peaches and simmer for about 5 minutes or until the peaches are tender. Remove the peel, if desired. Let cool. Cover and refrigerate until completely chilled.
