Pistachio Nougatine

    In a pot, bring the water, corn syrup and sugar to a boil. Cook without stirring until the caramel is an amber colour.

    Add the pistachios and stir to combine. Immediately pour onto a sheet of parchment paper or a silicone mat. With a spatula, rapidly spread out the mixture. Let cool completely. On a work surface, coarsely chop with a knife.
