Cut the apples into quarters, remove the seeds, then place in a saucepan with the sugar and water. Cook for about 25 minutes on medium heat or until the apples are very soft.

Pass the apples through a food mill or, using a blender, purée half the apple mixture a time. The applesauce will keep for 3 weeks in an airtight container in the refrigerator.
