Pear and Lavender Mimosas

    In a pot, bring the water, sugar and pears to a boil until the sugar has dissolved. Simmer over medium heat for 10 minutes. Remove from the heat. Add the lavender flowers. Cover and infuse for 15 minutes.

    Strain the syrup through a sieve, pressing the pears with the back of a ladle to extract as much syrup as possible. Compost the pears and lavender. Refrigerate until the syrup is completely chilled, about 1 hour.
