  • 2 eggs
  • ½ cup (125 ml) milk
  • 2 tbsp sugar
  • 1 tsp (5 ml) vanilla
  • ½ tsp ground cinnamon
  • 8 slices white sandwich bread
  • ¼ cup (60 ml) strawberry or raspberry jam
  • ¼ cup (60 ml) peanut butter
  • 2 tbsp butter
  • Maple syrup, for serving

  1. In a large bowl, whisk together the eggs, milk, sugar, vanilla and cinnamon.
  2. On a work surface, spread the jam over 4 slices of bread and the peanut butter over the remaining 4 slices. Close the sandwiches.
  3. Dip one sandwich at a time in the egg mixture, letting it soak in. Place the sandwiches on a plate while you prepare to cook them.
  4. Heat a large non-stick skillet over medium-low heat. Melt half of the butter in the skillet. Place two sandwiches at a time in the skillet and brown for 2 minutes on each side, flipping them over with a spatula. Keep the sandwiches warm on a baking sheet in an oven preheated to 200°F (95°C) while you cook the remaining sandwiches in the remaining butter, or serve them as you go. Serve with maple syrup.
