This peach lemonade recipe is refreshing and extremely fruity. Make the most of peach season to create the fruity base, which is reduced to a purée and strained. Add lemon juice and basil, let it rest, and you’ve soon got a unique, thirst-quenching drink.

- 4 cups (680 g) ripe peaches, cut into thin wedges
- 3/4 cup (160 g) sugar
- 6 cups (1.5 litre) water
- 1/2 cup (125 ml) lemon juice
- 1/2 cup (15 g) basil leaves, plus more for serving (see note)
- Ice cubes, for serving

- In a pot, bring 3 cups (510 g) of the peach wedges, the sugar and 2 cups (500 ml) of the water to a boil. Simmer over low heat for 8 minutes or until the peaches are very tender. Remove from the heat.
- Using a potato masher, purée the peaches.
- Strain the peach purée through a sieve set over a large measuring cup or bowl, pushing down with the back of a ladle to extract as much syrup as possible. Compost the residue. Transfer the syrup to a large pitcher.
- Add the remaining peaches and water to the pitcher along with the lemon juice and basil leaves. Cover and refrigerate for 2 hours or until the lemonade has completely chilled.
- When ready to serve, stir the lemonade. Pour into glasses filled with ice cubes. Decorate with more basil leaves.
