1 orange, grated zest only
1 lemon, grated zest only
3 tablespoons (45 ml) orange juice
3 tablespoons (45 ml) lemon juice
1 tablespoon (15 ml) Dijon mustard
1/2 lb (225 g) tubetti or other short pasta
1 1/2 cups (375 ml) arugula (optional)
1 1/2 cups (375 ml) grated carrots
1/2 cup (125 ml) pine nuts, toasted
2 green onions, chopped
1/4 cup (60 ml) olive oil
Parmigiano-Reggiano shavings, to taste
Salt and pepper
