Parmesan–Chorizo Consommé “Espresso”

Instructions

    In a saucepan, bring the broth and consommé to a boil. Season with pepper. Pour the boiling broth into 4 to 6 espresso cups. Place a slice of chorizo on the rim of each cup. Place a Parmesan shaving on each chorizo slice and sprinkle with chives.

    Serve, allowing each guest to put the garnish into the cup to flavour the broth.
