1 ½ cups (210 g) corn flour
1 tsp baking powder
1 tsp salt
¼ tsp smoked sweet paprika
¼ tsp cayenne pepper
½ cup (125 ml) buttermilk
2 eggs, lightly beaten
½ cup (50 g) finely grated Parmigiano-Reggiano cheese
24 oysters, scrubbed clean
Canola oil, for deep-frying
