Ingredients

14 oz (400 g) frozen Nordic shrimp, thawed and drained
3 tbsp (45 ml) mayonnaise
2 tbsp (30 ml) lemon juice
1/4 tsp (1 ml) sambal oelek (or to taste)
Salt and pepper
2 cups (500 ml) frozen corn, thawed
2 stalks celery, diced
1 red bell pepper, seeded and diced
1 green onion, thinly sliced
1 tbsp (15 ml) lemon juice
1 tbsp (15 ml) olive oil
1/4 cup (60 ml) chopped fresh basil (or cilantro)
4 cups (1 litre) arugula
