No-Cook Strawberry and Mint Jam

Coarsely crush the strawberries with a potato masher. Add the sugar, mint and lemon zest. Stir to combine and let stand for 15 minutes.

Add the pectin while stirring, and mix for 3 minutes. Let stand for 5 minutes. Pour into sterilized jars. The jam will keep for 1 year in the freezer or for 3 weeks in the refrigerator.
