Mustard Mayonnaise

   In a bowl, whisk together the egg, mustard and vinegar. Add one-third of the oil, drop by drop, whisking constantly. When the emulsion begins to form a mayonnaise, drizzle in the remaining oil, whisking continuously. Stir in the water. Season
