In a large saucepan over medium heat, soften the shallots in the butter. Add the wine and let reduce for 1 minute. Add the tomatoes and thyme. Season with salt and pepper. Bring to a boil. Add the mussels. Cover and simmer until the mussels have opened, about 4 to 5 minutes. Discard any mussels that haven’t opened.

Serve with a green salad and French fries, if desired.
