In a bowl, using a potato masher, purée the avocados with the Tabasco and lime juice until smooth. Season with salt and pepper. Spread the guacamole out in a shallow serving bowl, making a well at the centre.

Top the guacamole with the sour cream, salsa, bell pepper, cucumber, cheese and cilantro. Serve soon after assembling. Serve with corn chips.
