In a pot off the heat, whisk together the milk, cornstarch, sugar, salt and spices.

Bring to a boil over medium heat, stirring constantly and scraping the bottom and sides of the pot. Simmer for 1 minute. Remove from the heat.

Add both cheeses to the pot and whisk until melted. Reheat over low heat as needed, without letting the mixture boil.

Pour into an airtight container. Cover and refrigerate for at least 3 hours. Spread it on crackers or serve as a dip with vegetables or breadsticks. Stir well before serving. The spread will keep for 1 week in the refrigerator.
