  • 1 pineapple, peeled and diced
  • 1 can 14 oz (398 ml) coconut milk, lightly warmed

  • 1/2 cup (125 ml) sugar
  • Grated zest of 1 lime
  • 2 tablespoons (30 ml) lime juice
  • 6 to 8 large slices stale country bread
  • 1/4 cup (60 ml) unsalted butter
  • 1/4 cup (60 ml) sugar
  • Maple syrup, to taste

  1. In a large skillet, heat maple syrup until it begins to caramelize. Add pineapple and cook over medium heat, stirring frequently, for about 5 minutes or until it has released its juices and begins to caramelize. Let cool.
