Instructions

    In a small pot over medium heat, melt the butter. Add the flour and cook for 1 minute, whisking continuously. Add the milk and bring to a boil, whisking constantly. Simmer for 2 minutes. Season with salt and pepper. Cover and set aside.

    Meanwhile, in a pot of salted boiling water, cook the macaroni until al dente. Set aside ¼ cup (60 ml) of the cooking water. Drain the pasta and return to the pot.

    Add the reserved cooking water, béchamel sauce, cheddar, and cheese spread and mix to combine. Continue cooking until the cheese has melted. Season with salt and pepper.
